Cooking class with Bhoma: Stuffed Mixed Vegetable Paratha served with Masala Chai

My good friend and cooking instructor Bhoma Singh

First for the Masala Chai:

Light fire to boil water and then add milk

Add some tea leaves

Smash ginger for a bit of spice

Then add some sugar and bring to a boil three times

Strain and serve!

Stuffed Mixed Vegetable Paratha:

First: Boil potatoes and cauliflower 

 Then dice the vegetables: onions, garlic, green chili, 
tomatoes, spinach and anything you 
can think of...

 After the cauliflower and potato has cooked all the way, 
smoosh with a spoon. Careful! It's hot!

Then add some spices to the vegetables: Tumeric, 
coriander powder, chili power, ajwain and salt. 

 Now to make the parathas: sift about 4 cups of wheat flour
 (enough for four parathas)

 Add about a cup of water 
and a tablespoon of salt

 Knead until sticky

 Knead again on a flat surface and add a bit more flour. 
Roll into little balls, squash down 
and roll out into chapatis

 Flatten a bit more, like a tortilla

 Sprinkle the stuffing (mixed veg with spices)
 on top of the chapati

Cover with another chapati and close by folding 
the dough from the bottom chapati over the top. 

 Place the stuffed paratha on a griddle with a little oil, 
make some holes for faster cooking 
and keep turning until it is golden and ready

 My 'helpers': Bhnu and Raj... who really just came to help us eat!

Serve with curd and chili chutney: Enjoy!
